Making air fryer beet chips is so easy, and they taste absolutely delicious. With minimal effort you can have a wonderful side dish of nutritious beet chips with any meal. These beet chips also make a quick and healthy stand-alone snack.
At our farmer’s market we have a farmer who grows the sweetest beets that I have ever tasted.
Whenever we shop at the market, the main priority is to bring home some of these delicious beets. If that is the only vegetable we find at the market, my day is complete.
There are lots of ways to cook beets, but with these I often make a special treat of beet chips done in the air fryer. These chips are a healthy alternative to potato chips, and are just as popular if not more so, in our house.
These chips only require a few ingredients, which you can reduce even further depending on your preference.
These sweet beets are perfectly crisp, crunchy and sweet. They are sprinkled with salt and pepper for a bit of zest, and that is all there is to it.
This air fryer recipe is so quick and easy, it will likely be used over and over again.

Beet Chip Recipe
Beet Chip Ingredients:
- 3 medium sized red or golden beets
- 1 to 2 tablespoon olive oil (optional)
- salt
- pepper
For a nice sized plate full of beet chips, you will need about three medium sized beets. You can increase or decrease the amount of beets to meet your needs accordingly.
Use any colour of beets that you have on hand, or those that you like. You can use the same colour of beets, or a variety of colours, this is a personal preference.
My favourite is the sweet red beet, however just remember that it does come with lots of red juice that can stain, so use caution when handling the sliced up pieces.
Make sure that you protect any surfaces or clothing that you don't want beet dye touching to prevent staining.
Beet chips can be cut with a sharp knife or a mandoline slicer, and even a vegetable peeler. Mandolines are designed to make perfectly thin cuts that are consistent in size.
Try to make your beet chips as consistent in width as possible. The reason for a consistent sized beet slice is that the chips will be cooked more evenly during the cooking process.
Beet Chip Preparation
- Wash the beets well. Cut off the leaves or beet greens from the stems. You can set aside the beet greens to use for other dishes or salads if you like.
- Remove the fine roots on the underside of the beets so that you are left with just the plump beet root itself. There is no need to remove the skins.
- You can slice beets with a sharp knife or use a mandoline slicer. The thinner the slices the crispier potential the chips will have. For best results try for wafer-thin slices.
- The mandoline works best for cutting the beets into very thin slices.
- A vegetable peeler is also an option, although with this tool you are less likely to get uniform shaped chips. A peeler can get the pieces very thin, although they are not consistently shaped.
- Thinly slice each beet root into even sized chips or slices.
- Use the stems at the top of the beet as a handle to hold onto. Holding on to the stems as you cut the slices helps to stabilize the beet. It gives something to grasp onto providing some control over the cutting process.
- After slicing the beets it's helpful to blot them with paper towels to remove any excess water or juice from the slices.
- Next place the beet slices into a bowl.
- I used the olive oil to evenly coat the chips before placing them into the air fryer. The olive oil doesn't have to be measured out perfectly. Just drizzle over the beets and give them a toss to get the olive oil evenly coated on both sides of the the slices.
- If you want to omit the oil and go for a healthier option you certainly can, or you can use less oil. Use whatever amounts that you like, and whatever is your preference.
Air Fryer Cooking Instructions
- Preheat the air fryer to 350°F for three minutes before cooking.
- Place the beetroot slices into the air fryer drawer in a single layer, laying flat.
- Cook at 350°F for about 10 minutes. Check halfway through the cooking process, and turn the chips if needed. Check on them also to make sure that they are not burning.
- Cooking time may vary, depending on your air fryer and the thickness of your chips. You may need to cook a little more or a little less, so it's always good to pause your fryer to check on the cooking progress.
- You may also need to cook at a higher temperature if the slices are thicker. Our air fryer cooks french fries at 390°F.
- We hand sliced our chips and they were a little thicker. In the end I decided to put the chips back in for four more minutes at a higher air fryer temperature of 390°F to get them extra crispy.
- When finished cooking, place the beet chips on a plate and sprinkle with salt and pepper.
- If you have sliced the chips extra thin, they should crisp up as they cool down.
- You will probably have to make a few batches of chips depending on the number of beets sliced, as they will not all fit into the air fryer in a single layer all at once.
Do You Have To Peel Beets?
There is no need to peel the skin from the beets before slicing into beet chips.
The skin is very thin, and you will not even notice the skin on the edges of the chips after cooking.
I do make sure however to cut out any damaged or blackened parts on the skin before slicing.
Why Are My Air Fryer Chips Not Crispy?
If some of your beet chips are not crispy, they may not have been cooked long enough. You can put them back into the air fryer and cook for a little longer. Just make sure to keep a close eye on them so that they don't burn.
Freshly cut beets also hold a lot of moisture, so this may contribute to some sogginess as well. Make sure to dab off the beet juice with a paper towel before drizzling with olive oil.
The more thinly sliced beet pieces are often the most crispy, with less moisture and more thorough cooking. Thick slices tend to retain more moisture, and are therefore less crispy.
I found even the slightly soggy chips were still quite delectable, although some were returned to the air fryer for crisping up.
The key is to learn what works best with your air fryer, and what thickness works best for crispy chips.
How To Store Beet Chips
Beet chips can be stored for several weeks in the fridge in an airtight container.
They will lose their crispiness with storage, however they will still be very tasty.
Generally, we don't have any leftovers as they are a favourite in our house. They truly are a delectable treat.
Can You Freeze Beet Chips?
You can definitely freeze beet chips.
When you are ready to eat them, defrost and heat up in the oven for a lovely treat.
