- Sharp cheddar cheese - 3 Tbsp
- Garlic - 2 cloves for stuffing, 1 clove for brushing with olive oil to mushroom caps
- Onion - ½ medium sized, diced
- Fresh bread crumbs chopped finely - 2 tablespoon ( NOTE: To make gluten free, substitute for chopped pecans)
- Salt and black pepper to taste
- Olive oil - 2 tablespoon for cooking mushroom stems, onion and garlic,
- Olive oil - 1 tablespoon with minced garlic to brush on mushroom caps.

The size of the mushrooms is a personal choice.
Some people prefer the larger mushrooms because there is a lot more room inside the larger caps to stuff. The smaller mushroom caps however make for perfect bite sized appetizers.

- It's important to use fresh mushrooms for stuffing.
- To know that you have fresh mushrooms, have a look underneath the cap, where the cap meets the stem. If this area is gaping and open, the mushrooms may be aged.
- If the cap is still well attached to the stem, the mushrooms should be fresh and will hold up well for stuffing.
How To Clean Mushrooms
- You'll want to prevent the mushrooms from being too moist from the washing process, as this can contribute to sogginess and rubbery texture.
- This is generally less of an issue when cooking with the air fryer however due to the drainage tray and cooking technique.
- You can rinse the mushrooms quickly in cold water to remove the dirt and debris. Make sure to quickly dry them off after rinsing.
- Alternatively you can just wash them with a damp paper towel, and then dry.
- The next step is to gently break off the mushroom stems from the caps by gently pushing them sideways. Set the stems aside to chop for the stuffing.
- Removing the gills from inside the cap with a spoon will help to expand the space inside the cap, making extra space for the stuffing.
- To do this, scrape the inside of the mushroom cap with the edge of a spoon to remove these pieces from the mushrooms.
- This part can also be bitter in some mushrooms, so removing it can help to alleviate this bitter taste.
Brush Mushroom Caps
- Brush the top of the mushroom caps with olive oil and minced garlic prior to filling.
- This is optional, however adds lots of extra garlic flavour.
- Place the mushrooms on a baking sheet or plate while you prepare the stuffing for the mushroom caps.
Preparing The Mushroom Stuffing
- Prepare the bread crumbs by chopping several slices of fresh bread in the food processor.
- On a cutting board, trim the ends off the mushroom stems, and finely chop them into small pieces.
- Chop the onion and garlic into small pieces as well.
- Sauté the chopped mushroom stems for about 5 minutes in 2 tablespoon of olive oil. Cook until most of the juices are cooked down.
- Then add the garlic and chopped onions and cook for a several more minutes until soft.
- In a large bowl combine the cream cheese, cheddar cheese, onion and mushroom mixture, and the breadcrumbs.
- Add salt and pepper to taste.
- With a spoon, fill each mushroom cap full of the cream cheese and breadcrumb mixture.
- Add some shredded cheddar cheese to the top of each stuffed mushroom
- Spray the air fryer basket with a non stick cooking spray such as olive oil spray, then place the stuffed mushroom caps into the basket in a single layer.
